Meet the Owners

Chef Sean Stout and his wife Barbara provide the finest in food, service and enjoyment. Both Sean and Barbara have been involved in the restaurant business for many years. Before owning his own restaurant, Chef Sean's achievements were enjoyed at these New England restaurants:

A graduate of the highly acclaimed Johnson & Wales Culinary Institute in Providence, RI, Chef Sean holds a bachelors degree in Hotel and Restaurant Management as well as an Associates Degree in Culinary Arts. Chef Sean has meticulously chosen the menu for the Coyote Grill and prepares all food from his own recipes.

Sean has also appeared on television culinary shows, has made personal appearances for major culinary retail outlets, and Hannaford Supermarkets. He is perhaps best known for his calamari dish, and reputation for "off-menu" dinner specials designed to please a high profile clientele of ski vacationers and second home owners.


Nate Peterson, General Manager

A graduate of Penn State University, with a Degree in Recreation & Parks Management, Nate found himself falling in love with the Ski Industry. He moved to Waterville in 2001 working for the Waterville Valley Ski Resort, and in 2005 became the General Manager at the Coyote Grill.  Nate oversees all dining room operations and on occassion you will even see him cooking in the back with Chef Sean.
